Rachel Ann Seghesio was a very famous cook in Sonoma County and we are proud to share some of her recipes with the extended Seghesio Family. Salute!

INGREDIENTS

½ lb salt pork, diced
2 cloves garlic, minced
1 celery stalk, diced
3 T butter
1 t vegetable oil
1 yellow onion, diced
2 ripe tomatoes or 1 small can

TECHNIQUE:

1. Sauté all above ingredients until well cooked. Add 2 ½ quarts of hot water.


INGREDIENTS:

½ small head red cabbage, minced
1 zucchini, sliced
1 small potato, peeled and cubed
Swiss chard, ripped
1 can pinto beans, drained
A handful of green beans (or any fresh vegetables)
1 cup macaroni pasta

TECHNIQUE:

1. Add all vegetables and simmer at very low heat until all vegetables are done – about 1 hour.
2. Add pasta and simmer another 10 minutes or until pasta is cooked through.
3. Serve with grated Parmigiano-Reggiano cheese.
