Rachel Ann Seghesio was a very famous cook in Sonoma County and we are proud to share some of her recipes with the extended Seghesio Family. Salute!

 

INGREDIENTS:

½ lb. ground Italian sausage
4 medium zucchini, sliced
1 sweet red pepper, seeded and sliced
2 cups fresh or canned tomatoes, diced
1 medium eggplant, diced
1 clove garlic, minced
½ cup white wine
Salt & pepper, to taste

 TECHNIQUE:

1. Brown sausage.
2. Add all other ingredients.
3. Cover and simmer for 30 minutes or until the vegetables are tender and wine has reduced.
4. Serve over rice, potatoes or pasta.
